Ingredients

1.5 Cup brown rice dosa batter

1/4 cup onions finely chopped or to taste

1/4 cup grated carrot or to taste

Finely Chopped Vegatbles of your choice as per taste (spinach, corn, edamame, green peas, tomatoes etc)

1 - 2 tablespoons finely chopped coriander (cilantro) leaves

1 - 2 tablespoons chopped nuts (walnuts/ almonds)

1 - 2 tablespoons Cheese (optional)

1 teaspoon idli podi

salt to taste

1 tablespoon oil

Cooking Procedure

n  nn 1. Steam the corn, edamame and green peas before using them on uttapams. Add salt to the dosa batter and mix well.nn  nn 2. Heat a tawa/griddle on medium heat.  Pour around 2 tablespoon of batter  in portions and spread a bit.  Leave it a bit thick or else veggies will not stick. Add the chopped onions,  coriander, vegetables of choice, nuts and cheese. Do not add all the ingredients in one uttapam, distribute the veggies and nuts in combinations like onion tomato or carrot edamame or  spinach corn etc.nn  nn 3. Sprinkle some idli podi on top of the uttapams. Add 1/2 - 1 teaspoon of oil around the edges for cooking. nn  nn 4. Let it cook for 2 - 3mins on one side and then flip. cook for 2 - 3 mins on the otherside.nn  nn 5.
