This is a easy, healthy one pot dish

Ingredients

1 Cup Basmati Rice

4 Cups Finely Chopped Spinach( Only Leaves)

3/4 to 1 Cup Boiled Black beans/ kidney beans (Rajma)/ Garbanzo beans(chole)

Whole Garam Masala (1/2 Teaspoon Shahijeera, 1 inch piece Cinnamon, 3 Cloves, 3 green Cardamoms, 1 Black Cardamom, 1/2 piece Star Anise, 1 Bay Leaf, Little Mace)

Pinch of Nutmeg (optional)

3 Tablespoons Olive Oil

3/4 Cup Sliced Onions

Few Curry Leaves (optional)

4 Green Chillies slit lenght wise or as per taste

1 Teaspooons Ginger Garlic Paste/Grated

1/2 Teaspoon Redchilli Powder (Cayenne Peeper)

Salt To Taste

1.5 cups water. (water depends on the type of rice)

Cooking Procedure

n 1. Wash and soak the rice for 30 mins.nn  nn 2. Heat a thick bottom deep pot on medium heat, add oil.nn  nn 3. Add the whole garam and fry for 15 - 20 secs.nn  nn 4. Now add the green chillies, curry leaves and onions and fry till the onions start changing color to light brown.nn  nn 5. Now add the ginger garlic paste and fry, add the chopped spinach and fry till water from spinach evaporates. Now add the chilli powder and nutmeg.nn  nn 6. Drain the rice and add to the spinach mixture and mix well. Fry all of them for 2 mins.nn  nn 7. Add the water and salt. Increase the heat let it come to a boil. nn  nn 8. Reduce the heat to low, cover and cook.nn  nn 9. Half way through add the cooked beans and mix well. Cover and cook till done.nn  n
