Cassoulet is normally a slow cooked dish – but not this bad boy! Done in 30 minutes it’s quick but doesn’t compromise on taste! The secret ingredient to my Greek inspired cassoulet recipe is the Loukaniko – a delcious Greek sausage [insert smutty joke here :)]

Ingredients

extra virgin olive oil

ripe tomatoes

onion

large carrot

stick celery

cloves garlic

bay leaves

Greek sausages

Garlic sausage

smoked paprika

water (or chicken stock)

lemon juice

cannellini beans

fresh parsley or fresh basil
