Ingredients

1 cup whole wheat penne pasta

1 cup broccoli florets

2 cups finely chopped spinach leaves (palak)

11/2 teaspoon chopped garlic

1/4 cup corn

1/2 teaspoon cumin seeds(jeera)

1/2 teaspoon salt and 1/4 teaspoon pepper (or as per taste)

2 tablespoons grated low fat mozzarella or parmesan cheese

2 tablespoons olive oil.

1/4 cup onions

Cooking Procedure

1. Chop the spinach leaves very finely, if possible with the help of a food processor.2. Cook pasta as per package directions. Just a minute before turning off the gas add the washed broccoli florets to the pasta.3. Retain 1 cup of  pasta water, and drain the pasta with broccoli.4. Heat a skillet on medium heat, add oil, when the oil is ready add cumin seeds, chopped garlic and saute for 10 - 15secs.5. Add onions and saute for 1 min, then add the spinach and corn, cook it till water evaporates from the spinach.6. Add the pasta with broccoli, add salt and pepper and mix well till the spinach mixture coats the pasta. Cook for 4 - 5 mins.7. Sprinkle some grated low fat mozarella cheese or parmesan cheese and serve hot.
