Ingredients

1 pound (app 1/2 kg) carrots

1 medium sized green apple

1 tablespoon finely chopped mint leaves

2 tablespoons lemon juice

Salt and pepper as per taste

1 tablespoon olive oil

Cooking Procedure

1. Peel,wash and grate the carrots and apple.2. In a small bowl mix the oil, lemon juice, mint leaves, salt and pepper. 3. Pour the above prepared dressing over the carrots and apple, toss well.4. Serve cold.
