Enough about the weird Colorado weather. Lets talk about this Stone Fruit Quinoa Salad. No I didn’t say stoned, I know what you’re thinking since I live in Colorado and all (wink, wink). Sooooo, stone fruit. It’s finally in season and that means all the juicy nectarines, peaches, apricots, and plums are popping up in the stores. I love the beautiful colors of the fruit and they turn this quinoa salad into a rainbow of oranges, reds, and yellows.

plum

nectarine

peach

apricots

fresh basil

lime zest

fresh lime juice

honey

extra virgin olive oil

kosher salt
