Spinach and Koyagura Mixed Green Leaves Curry

Ingredients

7 Medium Cups Spinach Chopped to Medium Size

2 Medium Cups of Chopped Soyakura, Menthi Kura (Fenugreek Leaves), Koyi kura(Green Amaranth) All Combined

2 Medium Sized Onions Sliced Vertically into Thin Pieces

4 Green Chillies Finely Chopped into Small Pieces

12 Garlic Pieces Chopped into 2-3 Pieces Each

1 Tea Spoon Red Chilly Powder

1/2 Tea Spoon Salt

3 Table Spoons Oil

1/4 Tea Spoon Turmeric

Cooking Procedure

Heat Oil in a pan and add Onion, Green Chilly, Garlic Pieces and cook on medium heat until Onion turns golden brown.

Turning to low heat add Turmeric, Soyakura, Mentham Kura (Fenugreek Leaves), Koyi Kura (Green Amaranth), Red Chilly Powder, Salt and let them cook.

After the vegetables are half cooked, add Spinach and let the leaves cook on medium heat.

Increase the heat if there is excess water after cooking Spinach. Ensure that Spinach is not over cooked in the process, this spoils taste of the dish.
