Sometimes even I am still amazed that my favorite vegetable, the butternut squash, is so versatile. It can be roasted, pureed, stuffed into ravioli, made into to soup, added to salads… the list goes on and on. Today I am using it roasted in a sweet and savory risotto dish!

shallots

clove garlic, minced

white wine

hot chicken broth

candies pecans

pomegranate seeds (optional)
