Ingredients

FOR THE CABBAGE SLAW

small head purple cabbage, shredded

rice vinegar

peanut oil

FOR THE TZATZIKI

garlic clove, minced

medium cucumber, peeled, seeded, and cubed

chopped fresh mint

plain full fat yogurt

salt and pepper

FOR THE BURGERS

medium sized rainbow carrots, shredded

cooked quinoa

tahini

eggs

cumin

Sriracha

sesame seeds

grated yellow onion

fresh lemon juice

garlic clove, minced

panko bread crumbs

salt and pepper

avocado or vegetable oil

burger buns
