Ingredients

2 cups Whole wheat rotini pasta (uncooked)

1 large zucchini

1 large carrot

10 -12 cherry tomatoes or 1 large roma tomato

1/2 medium sized red capsicum

1/2 onion

2 large garlic cloves

1/2 teaspoon salt and 1/4 teasppon pepper (or to taste)

11/2 tablespoons olive oil

Water for boiling pasta

2 tablespoons grated parmesan cheese

2 tablespoons basil leaves

2 tablespoons slivered (sliced) almonds

Cooking Procedure

1. Boil rotini pasta as per package directions. Retain 1 cup of pasta water. Drain the pasta.2. Meantime prepare  the vegetables : peel the carrot, cut the carrot and zucchini into half moon shaped slices.3. Cut the onions, capsicum and tomatoes into medium sized pieces. Lastly chop the garlic into very fine pieces.4. Heat 1 tablespoon of  olive oil in a large skillet on medium heat.5. Add chopped garlic, slivered almonds, saute for 30 secs, then add the onions and saute for 1 min.6. Add all the vegetables except tomatoes and cook on medium low heat till the vegetables are 3/4th done.7. Add the tomatoes, pasta, half cup pasta water, salt & pepper and cook till all the vegetables are done.8. Add parmesan cheese, chopped basil leaves and drizzle half tablespoon olive oil, Serve hot.
