A delicious Vegetable Curry Soup with Noodles, Coconut Milk & Potatoes! It’s healthy, creamy and on the table in under 30 minutes!

Ingredients

1 tbsp extra virgin olive oil

3-4 tbsp curry paste

1 tbsp fresh ginger

1 medium carrot

2 medium potatoes

4 cups of vegetable stock or water

1 can (400ml) coconut milk

1 kaffir lime leaf (optional)

1 tbsp soy sauce

2 tsp brown sugar

150g snow peas

250g flat rice noodles
