Ingredients

1/4 Kg Okra (Lady Finger)

1 Table Spoon Peanuts

2 small Green Chilies chopped finely

1 medium sized Onion sliced into fine vertical pcs

1/2 Tea spoon Cumin Seeds (Jeera)

1/2 Tea spoon Mustard Seeds (Avalu / Sarson)

5 Curry Leaves finely chopped

1.5 Tea Spoon Minapappu (Urad Dal)

1.5 Table Spoon Oil

1/2 Tea Spoon Ginger Garlic Paste

1/4 Tea Spoon Turmeric

1/4 Tea Spoon Red Chilly Powder

Salt to your taste

Cooking Procedure

Wash and wipe Okra with dry cloth and cut them into round pieces. Wiping with cloth helps in removing the stickiness to an extent.

Heat Oil in a pan and sauté Peanuts until they turn golden red color. Keep the fried peanuts aside.

To the same oil in the pan add Cumin Seeds, Mustard Seeds, Curry Leaves, Green Chilies and Onion. Sauté until onion turns golden  color.

Add Ginger Garlic paste, Turmeric, Okra pieces, Red Chilly powder, Salt and mix well. Cook on low heat until Okra is cooked.

Add fried Peanuts to the cooked Okra. Mix well and take off the heat.

Notes

To remove the stickiness from okra, fry them first in around 1 teaspoon of oil in a non stick pan with out lid on medium heat for 5 -7 mins. For large quantities fry them in batches.
