Mix Veg Egg Pulao (Fried Rice)

Ingredients

1/2 Kg Fine Rice

1/4 Kg Beans Finely Chopped into Small Pieces

3 Medium Size Potatoes Finely Chopped into Small Pieces

1 Cup Green Peas

4 Carrots Finely Chopped into Small Pieces

2 Small Capsicums Finely Chopped into Small Pieces (Remove the seed & pulp)

1 Cup Broccoli Made into Medium Pieces

1 Cup Cauliflower Made into Medium Pieces

6 Eggs (Optional)

6 Green Chillies, Each Made into 2 Vertical Slices

1/2 Cup Coriander Leaves

2 Table Spoons Mint Leaves

1/2 Tea Spoon Sajeera

1 Tea Spoon Small Cinnamon Pieces

6 Cardamoms Pieces with Outer Layer Removed

5 Cloves

2 Tea Spoons Ginger Garlic Paste

1/2 Tea Spoon Turmeric

2 Tea Spoons Salt

4 Bojawara Leaves (Found in Asian Shops)

1/3 Cup Oil

Cooking Procedure

Make steamed rice partially cooked and keep it aside until the rice cools down. Then add 1 Tea Spoon of salt.

Add oil to a big pan and wait until it gets hot.Add Sajeera, Cinnamon, 6 Cardamoms (Peeling off outer layer), cloves, sliced green chillies to the oil and mix well.

Add all the cut vegetablesThen add 1 Tea Spoon of Salt, Ginger Garlic paste and mix well. Let it cook on low heat until all vegetables are well cooked.

Now add Coriander and Mint leaves.Add the partially cooked rice to the vegetable mixture in the big pan.Let it cook for 10-15 minutes on low heat before taking it off the stove.

Take a small pan and add oil to it to make scrambled eggs. Maintain the scrambled egg pieces size as per your desireAdd scrambled eggs to the rice and mix them gently.

Tastes good when served hot.
