Lemon cake mix bars! They’re soft and gooey with a delicious marshmallow topping. These little guys kind of mimic a lemon meringue pie. It’s pretty great! One of the best parts.. they’re made from a boxed cake mix. I love easy peasy things, but who doesn’t.

Ingredients

Lemon Cake Mix

Juice of two small lemons (about ½ cup), divided

salted butter, melted

egg

powdered sugar

mini marshmallows

Sprinkles to garnish
