n n Dice the onion and garlic and shop al of the vegetables into small pieces.n n Fry off the onion and garlic in a teaspoon of olive oil until the onion is clear, then add a sprinkle of salt and pepper.n n Add the vegetables except the beans and the potatoes, stirring frequently for two minutes.n n Add the tinned tomatoes and stir through, simmer for 1-2 minutes.n n Add the stock, chilli and oregano, cover and bring to the boil.n n Reduce the heat and simmer for 20 minutes.n n After 20 minutes, add the potatoes, cover again and simmer for another 10 minutes.n n Add the cannellini beans and quinoa, cover and simmer for another 10-15 minutes or until the quinoa is cooked through.n n Add more salt and pepper until you are happy with the flavour.n n Serve and garnish with your favourite herb.n n Enjoy!
