A sweet-and-spicy pineapple salsa is a great way to jazz up baked salmon, a fish that is a super source of omega-3s and is low in saturated fat and cholesterol.

Ingredients

3/4 cup diced pineapple 2 tablespoons finely chopped red onion 2 tablespoons snipped fresh cilantro 2 tablespoons finely chopped red bell pepper 1 teaspoon seeded and finely chopped fresh jalapeƱo Cooking spray 4 salmon fillets with skin (about 5 ounces each), rinsed and patted dry 2 tablespoons no-salt-added ketchup 1 tablespoon hoisin sauce 1 tablespoon honey 1 teaspoon plain rice vinegar 1 small garlic clove, minced

n n Heat the pan and pour in vegetable broth. Place the two fillets in the pan and squeeze lime over top. Finely chop or crush garlic over and spread over the two. Place a lid over top and keep a close eye on it so that the stock doesn't evaporate.n n Now the fun part! Cut up Pineapple, Red Pepper, Cherry Peppers, Cilantro, and Red Onions. You can either buy a whole pineapple or purchase in a container at whole foods. Your choice.n n Chop up the pieces small so that you get every ingredient for every bite. Once the salmons cooked cover the fillets with your Sweet & Spicy Delectable Salsa and indulge in it's natural juices.nn
