n 1. Peel off the rough skin of the bitter gourd and cut them into one inch pieces.nn 2. wash them with salt water and drain.nn 3. Add oil to the pan and fry the bitter gourd pieces till they are crispy and attain nice redish brown colour.nn 4.Remove the excess oil..or take out the bitter gourd pieces and add to a fresh pan with little oil.nn 5. Add onion pieces and saute them.then add tomatoe pieces.nn 6. Add salt ,sambar and chilli powders.nn 7. Add tamarind juice,mix well. cover and cook till the gravy becomes thick and oil seperates.nn 8. Serve hot with rice or roti.n
