Gluten-free, One-Pot Pasta & Chicken Fajitas (GF); an easy and wholesome meal that you can feel good about serving during busy weeknights. This flavorful recipe only takes 30 minutes from start to finish.
Ingredients
4 chicken fillets
1 lb gluten-free pasta (penne)
1 pk McCormick's New Organic Fajita Seasoning Mix
2 tbsp olive oil
4 cups water
3 bell peppers (different colors)
cilantro, garnishing
pinch salt
Cooking Procedure
n span>Schedulenn n Season both sides of the chicken with McCormic's New Organic Fajita mix. Set aside ½ tbsp of seasoning.n n Heat the oil in a large sauté pan. Add the chicken. Sauté each side for 3 minutes. Remove chicken from pan and set aside.n n Add water, salt and remaining seasoning to the pan and cover for 5 minutes or until the water comes to a boil.n n Meanwhile, cut the pepper into long strips and slice de chicken.n n Add pasta to the water and let boil for about 5 minutes. Stir as needed.n n Add peppers and chicken to the pan, cover and cook for another 3-5 minutes.n n Garnish with fresh cilantro and serve.nn
