It's that time of the year again when we can buy Meyer lemons. The Meyer lemon, is a citrus fruit native to China and brought to America in the early 1900's. It is thought to be a cross between a true lemon and a Mandarin orange; and has a delicious, fruity, flowery flavor that is very delicate. They make delicious desserts.These muffins are not fancy looking; but they are delicious with a delicate, flowery flavor and a light, fluffy texture.

Ingredients

2 C flour 1C sugar 1 t baking soda 1 t of salt 2 eggs @ room temperature 1C milk ½ C walnut oil 1 C juice with pulp from Meyer lemons (I used 2 juicy lemons) Meyer lemon Zest from 2 large Meyer lemons, minced in a blender (Meyer lemons are very sweet and these muffins are very delicate and fluffy. However, if you want a more intense lemon flavor add the zest from another type of lemon.) Topping: 4 T sugar 1 t cinnamon
