Ingredients

For the crust: 1 ½ cups graham cracker crumbs, ¼ cup granulated sugar, ½ teaspoon ground cinnamon, ⅓ cup unsalted butter, melted

For the filling: 4 (8 oz) packages cream cheese, softened, 1 cup granulated sugar, 1 teaspoon vanilla extract, 4 large eggs, 2 cups sour cream, ¼ cup heavy cream

For topping:

Fresh strawberries or blueberries

Cooking Procedure

Prepare the crust: Preheat your oven to 325°F (163°C).

Prepare the filling: In a large mixing bowl, beat cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add granulated sugar and vanilla extract, continuing to beat until fully combined. Add eggs one at a time, mixing well after each addition to avoid overmixing. Stir in sour cream and heavy cream until the mixture is smooth and well combined.

Assemble and bake: Pour the cream cheese mixture over the cooled graham cracker crust in the springform pan. Tap the pan gently on the counter to remove any air bubbles in the batter. Place the pan on a baking sheet to catch any possible drips and bake for 45–50 minutes, or until the center is set and the top is lightly browned. Once baked, turn off the oven and leave the cheesecake inside with the door cracked open for 1 hour to cool slowly. After 1 hour, remove the cheesecake from the oven and let it cool completely at room temperature. Refrigerate the cheesecake for at least 4 hours, preferably overnight, to allow it to set completely.
