Here is a quick and easy mid-week dinner meal idea, Achiote Pan Seared Chicken on Southwest Rainbow Hash.
Achiote oil, what the heck is that? I have it on hand to use in Mexican cooking. The achiote oil lends the little extra bit of authentic flavor and red color to the chicken. It’s simply annatto seeds that are steeped in oil. You can read more about it here in a post I did a while back. I like to use it now and then and it works perfectly here, but feel free to use regular vegetable oil if you don’t want to make it or have on hand, it’s optional.
This vegan tzatziki sauce is a fantastic light and creamy dip made with tofu. It’s a great sauce for BBQ and picnics, and it’s a delicious snack with a pita bread or falafel or just on a slice of toast. You can also dip veggies and chips in this yummy sauce….or just eat it right out of the bowl with a spoon!
Last weekend my job was to bring a dessert to a friend’s wedding shower. I thought I had been handed quite a daunting task. I knew that if I was going to serve dessert to a group of women in Los Angeles that it would have to be in mini portions. Perfect. No problem. What better way to end a meal than with a rich, creamy, chocolatey mousse. Any three ounce vessel will work for the mini portion. Being the Mama that I am, it made me very happy to see that everyone had finished their desserts.
