Ingredients

4 Cups Chopped Thotakura (Amaranthus) Leaves

1 Cup boiled Rajma.

1 Cup Finely Choppd Onions.

2 Tablespoons Olive Oil

2 Small Chopped Greenchillies.

1 Teaspoon Ginger Garlic Paste

1/2 Teapoon Redchilli Powder

1/4 Teaspoon Turmeric

salt to Taste

Water as required.

Cooking Procedure

Heat a pan on medium heat, add oil, immedietly add greenchillies and onions.

Fry the onions till they become light brown in color.

Reduce the heat, add gingergarlic paste and turmeric. Fry for 10 - 12 secs.

Now add the chopped thotakura (Amranthus Leaves), mix well. cover it and cook for 4 - 5 mins.

Add the boiled rajma, redchilli powder and salt, mix well and cook till thotakura becomes tender.

Add water if required while cooking.

Serve hot with rice or roti.

Notes

Note: 1. There are no fixed measurements for this recipes, ingredients can be added as per choice. 2. To boil Rajma, soak 1/2 cup dry (uncooked) rajma in enough water for 5-6 hrs. Then wash, add 2.5 cups water and pressure cook them for just 2 whistles. Pressure cookers vary in their cooking time adjust the cooking time as per your pressure cooker.
