Ingredients

5 Cups Chopped Spinach

1 Cup Cubed Carrots

1/2 Cup Finely Chopped Fresh Dill Leaves

1 Teaspoon Chopped Garlic

1 Cup Chopped Onions

2 Small Green Chillies Chopped

1/2 Teaspoon Redchilli Powder or to taste

2 Tablespoons Olive Oil

Salt to Taste

1/8th Teaspoon Turmeric

Cooking Procedure

n 1. Wash and chop the vegetables.nn 2. Heat a pan on medium heat, add oil .nn 3. When the oil is ready add green chillies, onions, ang garlic. Fry till the onions turn light brown in color.nn 4. Reduce the heat to low, add the chopped dill leaves, fry for 2 mins.nn 5. Add the turmeric, carrots, fry for 2 mins. Add the redchilli powder. mix well.nn 6. Now add the chopped spinach, mix well and cook uncovered.nn 7. Add the salt, and cook till spinach and carrots are well cooked and all the water evaporates. Increase the heat if water is more in the curry.nn 8. Serve hot with rice or roti.nn Note: Quantity of vegetables can be adjusted to your preference. Carrots can be replaced by potatoes.n
