Healthy and Tasty Pasta Dish

Ingredients

1/2 lb Linguine pasta

2 Cups Chopped Asparagus

1.5 Cups Chopped yellow squash

1 Cup Chopped Red Bellpepper

1 Cup Chopped Onions

1/2 to 1 Cup Fresh Mint Leaves as per taste

3 Large Garlic Cloves

2 Tablespoons + 1 Teaspoon Olive oil

1/4 Teaspoon Cayenne Pepper or Redchilli flakes

Salt and Pepper to taste

2 Tablespoon Grated Parmesan Cheese

10 - 12 Almond soaked in water

Cooking Procedure

n 1. Cook pasta till they are 95% done. keep some pasta water aside and drain the pasta.nn  nn 2. Meanwhile heat a wide pan on medium heat, add olive oil and then onions. Cook them till they become translucent.nn  nn 3. Now add the chopped asparagus, yellow squash, bellpepper and cayenne pepper. Mix well and cook till they are 75% done.nn  nn 4. While the vegetables are cooking grind fresh mint, garlic with one teaspoon olive oil and one tablespoon water. This paste should be little COARSE not a fine paste.nn  nn 5. When the vegetables are 75% done, add the cooked pasta, mint paste, 1/3 rd cup pasta water, salt and pepper. Mix well and cook for 3 - 4mins. Use pasta water as required.nn  nn 6. Peel off the skin of almonds, cut into thin slices and mix with the pasta.nn  nn 7. Sprinkle some parmesan cheese on top and serve hot.n
