Ingredients

1/2 Cup Edamame/ Fresh Soybeans(Frozen)

1/4 Cup Green Peas (Frozen)

1/4 Cup Fresh Corn (Frozen)

1/4 Cup Grated Carrot

1/4 Cup Finely Chopped Onions

5 - 6 Tablespoons Oats Powder

2 Tablespoon Mint leaves

2 Tablespoons Coriander/ cilantro leaves

1 - 2 Green chillies as per taste

Less than 1/2 Teaspoon Grated Garlic

Less than 1/2 Teaspoon Grated Ginger

1/2 teasppon lemon juice

1/2 Teaspoon Redchilli Powder

1/2 Teaspoon Cumin Powder

1 Teaspoon Coriander Powder

salt to taste

2 tablespoons Olive oil

1 egg (optional)

Cooking Procedure

n 1. Thaw edamame, peas and corn and pat dry on a tissue paper.nn 2. In a food processor add edamame, peas, corn, mint, coriander leaves, green chillies, redchilli, cumin and coriander powder, ginger, garlic, lemon juice. Grind them to a coarse paste.nn 3. Take out the mixture into a bowl, and add oats powder, egg, carrot, onions, salt and mix well. nn 4. Make small sized round or oval cutlets using this mixture.nn 4. Heat a pan on medium heat, add olive oil, when oil is hot place these cutlets and cook them until they are slightly golden brown color on both sides. It will take about  3 mins on each side.nn 5. Cook these cutlets in batches using required amount of oil.nn 6. Serve hot with any spicy sauce or ketch up.nn  nn Note:nn 1. Use little more extra oats powder if the mixture is too wetnn 2. If the cutlet breaks while frying, dip it in a solution made of 1 part all purpose flour and 4 parts water and fry.nn  n
