Healthy low calorie curry

Ingredients

4 Cups Chopped Spinach (palak/ Palakura)

1 Cup Edamame beans/ soybeans(I used Frozen)

1 Cup Chopped Onions

1/4 Cup Finely Chopped Dill Leaves( Suva/ soya kura)

1 Tablespoon Finely Chopped garlic

2 - 3 Chopped Greenchillies, as per taste

Salt to taste

2 Tablespoons Olive oil

pinch of turmeric

Cooking Procedure

n  nn 1. Heat a pan on medium heat, add olive oil, then add onions and greenchillies.nn  nn 2. Fry them till onions turn light brown in color.nn  nn 3. Than add thawed edamame, dill leaves and turmeric, mix well. Lower the heat, cover and cook for 5 - 7 mins mixing in between. The edamame should be 3/4th cooked by then. Add little water if required. Do not burn edamame and dill leaves.nn  nn 4. Now add chopped spinach mix well. Add salt cook uncovered till spinach is cooked. If more water is oozing  out of spinach increase the heat so that most of the water evoparates.nn  nn 5. Serve hot with rice, roti as a side dish.nn  n
