Ingredients

2 Cups Grated Carrots

1/2 Cup Milk

5 Tablespoons Dry Nonfat Milk Powder

1/2 Cup Sugar or to taste

4 Green Cardamoms

8 - 10 Almonds or to Taste

4 - 6 Pistachios or to Taste

Cooking Procedure

n 1.Soak the almonds and pistachios in hot water for 15 mins. Later peel off the skin and cut into thin long pieces.nn 2. Heat a nonstick pan on medium heat. Add the grated carrots and milk and bring to a boil. Cover it and cook till carrots are soft ( 90% cooked).  nn 3. Now add the milk powder, and mix well. Cook for 2 - 3 mins.nn 4. Add the Sugar and mix well. The carrot mixture becomes little watery, cook uncovered till all the water evaporates mixing regularly. Increase the heat to medium high if the water content is more.  Meanwhile crush the cardamoms into fine powder and add to the carrot mixture. nn 5. Add half of the almond pieces. Mix wellnn 6. When all the water evaporates turn off the heat. Take out in a bowl and garnish with almonds and pistachios.nn 7. It can be served hot or cold.nn Note: Step 2 can also be done in a pressure cooker.nn            Water from carrots will be sufficient to cook the carrots.nn             Fullfat milk powder can be used for kids and  if you are not calorie conscious.n
