Today’s post is part of the Virtual Vegan Potluck 2014! While this blog isn’t entirely vegan, I have a lot of respect for the choice to minimise your impact on the animal kingdom through the way you eat and consequently, many of my recipes include instructions on how to veganise them. No need for that with this recipe!

Ingredients

green bird's eye chillies

galangal

stalks lemongrass

kaffir limes, zest only

coriander roots

fresh turmeric root

garlic

purple Thai shallots, peeled

red bean curd or preserved tofu

curry paste

coconut milk

kaffir lime leaves

soy sauce or salt

juice of half a lime

freshly ground pepper

red pepper

Asian mushrooms

buckwheat noodles

vegetable stock paste
