Mediterranean Lentil Quinoa Rice Salad with Village Harvest Protein Blend in a tasty combination of vegetables and aromatic flavors, to take you on your next journey in your own kitchen!
Ingredients
1 cup organic protein blend (brown rice, lentils, red quinoa)
½ cup feta cheese
¾ cup green olives, sliced
½ cup pine nuts
1 cup cucumber, cubed
1 cup grape tomatoes, chopped
handful fresh parsley, chopped
2 tbsp olive oil
1 large lemon, juiced
salt and pepper, to taste
Cooking Procedure

n n Cook lentil, quinoa and rice blend according to package instructions. Allow it to cool off for 5 minutes.n n Meanwhile, chop up the tomatoes, cucumber, olives and parsley. Set aside.n n In a small glass container add in oil, juice from one lemon and season with salt and pepper. Whisk to combine.n n When lentil, quinoa and rice blend is cooled off, fluff with fork and transfer to a medium glass bowl.n n Add in the remaining ingredients and fold to combine.n n Pour dressing over rice salad and serve coldnn
