Ingredients

1/2 kg White Long Brinjals

2 Medium Onions Vertically Sliced

2/3 tsp Green Chili Paste

Salt to taste

2 tsp Coconut Powder

2 tbsp Olive Oil

1/4 tsp Turmeric Powder

2/3 tsp Ginger Garlic Paste

1/2 tsp Coriander Seed Powder

2 tsp Coriander to Garnish

15 Curry Leaves

Cooking Procedure

Wash long white brinjals & cut horizontally into 3-4 pieces. Cut each horizontal piece into 4 vertical pieces.

Soak cut brinjal pieces in bowl with salt water (1/2 tsp salt) until they are transferred to the cooking pan.

Add sliced Onions, Curry Leaves to the hot oil in a pan, saute them until Onion turns golden brown. Add Turmeric Powder & mix well.

Add the soaked Brinjal Pieces along with Coconut powder, Ginger Garlic Paste, Coriander Seed Powder& Salt.

Cook on low heat until the brinjal cooks well, keep mixing gently to cook uniformly. Garnish with Corinder leaves and serve hot.
