Prawn Biryani

Ingredients

1/2 Kg Prawns

400 Gms Basmati Rice

2 Tea Spoons Red Chilly Powder

6 Table Spoons Oil

1.5 Tea Spoon Salt (Add or Reduce Based on Your Taste)

1/2 Tea Spoon Turmeric

5 Green Chillies Sliced Vertically

1/2 Cup Coriander Leaves

2 Table Spoons Mint Leaves

1/2 Tea Spoon Sajeera (Available in Indian / Asian Stores)

5 Cloves

6 Cardamoms

1/2 Tea Spoon Cinnamon Small Pieces

4 Bojuwaru Leaves (Available in Indian / Asian Stores)

Fresh Coconut Milk (Making Procedure Described)

4 Big Tomatoes

10 Curry Leaves

2 Tea Spoons Ginger Garlic Paste

2 Big Sized Onions Sliced Vertically

Cooking Procedure

Add Prawns, 1 Tea Spoon Ginger Garlic Paste, Turmeric Powder, Red Chilly Powder, 1/3 Tea Spoon Salt to a bowl and mix well. Let the mixture marinate until you are ready with other ingredients.

Making of Coconut Milk : Make pieces of fresh coconut and grind them adding 2 cups of water. Take out pulp of the coconut milk by pouring it into a thin filter to separate the milk. Squeeze the pulp well enough to take out the milk completely. Keep this milk aside.

Add 3 Table Spoons Oil to a Pan and let it heat.Add Prawn mixture to the hot oil and let it cook on medium heat for a while, add chopped Tomatoes to the mixture now. Keep the heat until the mixture is well cooked on medium flame. Let this mixture stay aside until other ingredients are ready.

Take another Pan and add 3 Table Spoons Oil to a Pan and let it heat.Add Sajeera, Cloves, Cardamoms, Cinnamon Pieces, Curry Leaves, Chopped Onions, Mint Leaves, Bojuwaru Leaves to the hot oil. Let them cook until Onion turns golden brown color.

Add Ginger Garlic Paste, Coconut Water, 4 Cups Water (1:1 ratio of Water & Rice), 1/3 Tea Spoon Salt to above mixture and cover it with lid until the Water is boiling.

Add Cleaned Basmati Rice to the Boiling Water and let it cook on medium heat.Add Prawn & Tomato mixture, Coriander Leaves to the half cooked Basmati Rice and let it cook on low heat until Rice is well cooked along with Prawns.
