Mixed Vegetable Pickle

Ingredients

2 Medium Sized Cups Cauliflower Pieces

2 Bitter Gourds Sliced into Round Pieces with Skin Peeled Off and Seeds Removed

2 Medium Sized Cups Cabbage

3 Lemons

1 Tea Spoon Red Chilly Powder

1 Tea Spoon Salt

1/4 Tea Spoon Turmeric

1 Tea Spoon Chopped Ginger

3 Green Chillies Cut into Small Pieces

20 Raisins

20 Cashew nuts fried in Oil

20 Curry Leaves

1/2 Tea Spoon Jeelakarra (Cumin Seeds)

1/2 Tea Spoon Avalu (Mustard Seeds)

2 Red Chillies Broken into Two Pieces

3 Table Spoons Oil

Cooking Procedure

Cut 1 Lemon with the skin into small pieces removing seeds and make Juice of the other 2 Lemons. Keep them aside for later use.

Add Cauliflower, Bitter Gourd, Cabbage, Garlic, Green Chillies , Cut Lemon Pieces, Red Chilly Powder, Salt, Turmeric, 2 Lemons Juice to a bowl and mix well.

Heat Oil in a Pan and add Jeelakarra (Cumin Seeds), Avalu (Mustard Seeds), Curry Leaves, Red Chillies. Fry until ingredients turn golden brown color.

Add the Fried ingredients, Raisins, Cashew nuts to the mixed Vegetables in the bowl and mix well.

Let the mixture marinate for 3 hours before serving.
