Today, I was craving something a bit different for my lunch, so decided to create this dish. Sometimes, you don’t feel like eating an entire curry dish, as they can be very filling. However, I still wanted to enjoy the flavours and spices of a curry. For my curried chickpea recipe, I decided to add lots of spice to stir fried vegetables and create a small amount of sauce. This way, I was able to enjoy the indian flavours I love, held together by the chickpeas and vegetables, absorbing most of the tomatoes juice, to create a light and delicious meal.
