Sorry, had to go back to baking again!! This is a fun cookie, and really, it's not as complicated as it may seem, but it is time consuming. This recipe is incredibly versatile, and can conform to whatever colors, and/or flavors you would like this to be! Now on the plus side, once you assemble this cookie, it's just a matter of slicing and baking, and no additional decorating needed! (Unless you want to dip a corner in chocolate, or add some designs.) This is a great "do ahead" kind of cookie, that you can pull out of the freezer when ready to use. Plus, it's cool, festive, and can be used for ANY holiday or occasion! Now, I will say that it has been a few years since I have done this cookie, so I kinda did it the "hard way" by rolling out "ropes" of each color, instead of simply taking each colored dough, forming it into a rectangle, slicing, and stacking! Ugh....it happens sometimes, but, that's ok, because they still turned out! (But, that's why you will see some "spacing" in the cookies after baking. The format of stacking is the same, however! If this is your first time doing a checkerboard cookie, I would suggest dividing the dough in half, and just making 2 colors to start- it would be much easier that way! Good luck, and happy baking!
