Lime cookies – no gluten, eggs and optional lactose. Cookies with corn flour.
Ingredients
5.2 oz (150 g) butter or vegetable substitute
¾ cup (150 g) of brown sugar (powder)
2 tsp lime peel
200 g of corn flour (gluten free)
300 g of rice flour (gluten free)
3 tbsp lime juice
1 tsp gluten free baking powder (optional)

n Ingredients should be at room temperature. All add to the bowl and knead the dough quickly. Ready dough wrap in cling film and refrigerate for fifteen minutes.nn Preheat oven to 355 degrees F (180C). Line baking pan by baking paper. From dough make small balls (if dough sticky – moisten your hands with water). Flatten balls with a folk (immersed in water) – twice the cross.nn Bake cookies about 20 -25 minutes. Cool in the form.n
