The Brussels sprout is a cultivar in the Gemmifera group of cabbages, grown for its edible buds.Brussels sprouts, as with broccoli and other brassicas, contains sulforaphane, a chemical believed to have potent anticancer properties. Although boiling reduces the level of the anticancer compounds, steaming, microwaving, and stir frying does not result in significant loss.

Ingredients

1lb brussel sprouts.

1 cup chopped tomatoes.

1/2 cup chopped onions.

2 chopped garlic pods.

2tbsp olive oil.

1/2tsp each mustard and cumin seeds.

salt to taste.

1tsp chilli powder.

1tsp sambar powder.or 1tsp coriander and 1/2tsp cumin powders.

1/2tsp garam masala.

1 spring curry leaves.(optional)

one lemon.

Cooking Procedure

n 1.chop off the hard part,remove the top green layer and cut the brussel sprouts into four parts.nn 2.wash them and keep aside.nn 3.Heat olive oil in a pan...add mustard,cumin seeds,garlic  and curryleaves.nn 4.Add onions and saute well.nn 5.Add salt. Add tomatoes chilli,sambar powders add little water if required and cook on low flame till oil seperates.nn 6.Add brussel sprouts,add 1/2 cup water ,stirr well ,cover and cook on medium flame.nn 7.cook till they become tender and water is absorbed.nn 8.Finally add garam masala and lemon juice...and switch off the flame.nn 9.serve with roti or rice.n
