Last week I posted a picture of zucchini noodles aka zoodles with vegan Bolognese sauce on our Instagram page (go check it out and let us know – comment on one of the pictures – if this blog post got you there). Our instafriends requested this recipe. It one of my favourite recipes, really easy and very versatile. You can use it on pasta – regular and vegetable raw “noodles”, vegan ravioli, lasagna, over steamed vegetables, baked polenta etc. I always make a big bach and store some of it in the freezer in small containers.
