We try to celebrate all ethnic and religious Holidays by cooking the appropriate foods whenever there is the opportunity to do so. So consequently, we cooked brisket on Passover Monday and will cook ham or lamb on Easter Sunday. And we just can't wait for Cinco de Mayo! The brisket with potato kugel was delicious as always and yielded enough brisket and vegetables for two nights with enough brisket left over for hash and possibly a sandwich if we are careful.
