Summertime equals pineapple! One of my favorite fruits. Always fresh and juicy. I'm trying to work on my cupcake skillz so I decided to make my version of a pineapple upside down cake, but in cupcake form. Spice cake recipe with a little fresh pineapple and Coconut Cream Cheese Frosting (recipe following). The cherry on top is optional, but adds another element of sweetness. As I've mentioned on my blog before, baking is not as customizable as savory cooking, but I have some suggestions for this recipe. If you're a real pineapple freak, put multiple pieces of diced fresh pineapple on the bottom. You can also bake a maraschino cherry into the top, but it will be covered up by the icing. Add a ton of the toasted coconut on top if you love that flavor. My If You Like Pina Coladas cocktail washes it down nicely.
