Ingredients

1 pound (450 gms) thin whole grain Spaghetti

1 cup chopped zucchini

1 cup chopped carrot

1 cup broccoli florets

Half cup chopped capsicum

Half cup green peas

Half cup onions

2 tablespoons scallions (green onions)

1 teaspoon finely chopped garlic

2 / 3 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and Pepper as per taste

Half cup Organic Parmesan Cheese or as per taste

Cooking Procedure

n n Cook Spaghetti as per  package directions, at the end add broccoli florets leave it for 2- 3 mins and drain the spaghetti with the broccoli. Retain 1 cup of spaghetti water.n n Heat oil in a large skillet on medium heatn n Add garlic and onions, saut? for 1minn n Add  all the vegetables and allow it to cook till all the vegetables are half done, if needed add some spaghetti watern n Add the spaghetti and broccoli and half cup of spaghetti water.n n Add pepper, salt & Italian seasoning, mix well and cook for 5minsn n Serve in a plate and garnish it with  parmesan cheese and scallions.nnn  n
