1 Cup Cooked Rice (white or brown basmati rice)

1/2 Cup thinly sliced Mixed bell peppers

2 - 3 Tablespoons thinly sliced onions

2 tablespoons spring onions

2 eggs

1 tablespoon oil

1/2 teaspoon tomato ketch up (optional)

dash of soy sauce and vinegar

Cooking Procedure


n 1. Heat a non stick pan or wok on medium high heat.nn  nn 2. Add oil, when hot add the onions saute for 1 min, add the spring onions and bell peppers and saute for 2 mins.nn  nn 3. In the same pan move the veggies to one side, add the eggs on the other half side and scramble them. Also mix the veggies in between. When eggs are fully cooked mix with the veggies and saute.nn  nn 4. Add  the rice and remaining ingredients, mix well and cook for 2 more mins and serve hot.n
