Okra when baked uses only very little oil and removes all the slime.

Ingredients

1 Pound Okra (Bhendi) Fresh or Frozen

1 Medium Red Bell Pepper

1/2 of a Large Onion

1 Tablespoon + 1 Teaspoon Olive Oil

Salt to taste

1 Tablespoon Blackgram (Urad Dal) Optional

2 - 3 Tablespoons Peanuts

1/2 Teaspoon Redchilli powder or to taste

1/2 Teaspoon Mustard seeds

1/2 Teaspoon Cumin Seeds

Few Curry Leaves

2 Greenchillies slit length wise

1 Dry Redchilli

pinch of turmeric and hing

Cooking Procedure

n 1. Preheat the oven to 375 F.nn 2. Clean, pat dry the okra and cut into pieces.nn 3. Add 1 tablespoon of olive oil and salt to taste to the cut okra and mix well.nn 4. Line a baking sheet with a parchment paper and spread the okra in single layer.nn 5. Bake in the oven for 15mins.nn 6. Mean while dice the bell peppers and onions. After 15 mins take out the baking sheet, add the peppers and onions and mix well and bake again for 20 mins or till done. Every oven varies so adjust the temp and time accordingly.nn 7. You can serve it as it is by seasoning it with some black pepper powder or give it more flavor by adding more seasonings.nn 8. Heat a pan on medium heat  add 1 teaspoon oil, then add blackgram, mustard seeds, cumin seeds,dry red chilli. When they splutter and black gram starts  turning pink add the peanuts, green chillies, curry leaves, hing, turmeric and fry for 1 min. nn 9. Next add the baked okra with peppers and onions, redchilli powder, pinch of salt (adjust salt accordingly), mix well, reduce the heat to low and cook for 5 - 6 mins.nn 10. Serve hot as a side dish for roti/ rice/ quinoa/ oats.nn  n
