This Gluten Free Instant Pot Farm Share Minestrone Soup is a hearty meal in itself. I make this minestrone soup with potatoes instead of pasta to make it gluten free. Using the instant pot means it's done in 30 minutes and tastes like it simmered on the stove all day.

Ingredients

Ground Italian Sausage or Ground Pork

Yellow Onion

Garlic

Bay Leaf

Fresh Basil

Fresh Oregano

Roma or Plum Tomatoes

Tomato Paste

Celery

Carrots

Potatoes

Parmesan Cheese Rind

Cannellini or Great Northern Beans

Spinach

Beef or Vegetable Broth

Cooking Procedure

Press the saute button on the instant pot and let it heat up for 3 minutes

While the pot is heating up dice the yellow onion, 3 cloves of garlic. I use my ninja for this, but any food processor will work for this step

Place the pound of ground sausage or ground pork in your instant pot. Brown for 3 minutes

Add in the diced onion and minced garlic and Saute for 5 minutes
