So when last month, I saw The Inaugural Spring Challenge via Cookware Brands, I couldn’t help but “to submit the most enticing of spring recipes!”
They were not even fussed about recipes as “any meal, snack or dessert will do!”
I like fun food challenges that are relaxed from the start…YOU?
Ingredients
6 large ripe Roma tomatoes 5 garlic cloves, sliced ¼ red onion, diced 2 teaspoons balsamic vinegar 2 teaspoons olive oil salt & pepper to taste ½ cup chicken stock ¼ - ½ cup bacon pieces, cooked 4 slices zucchini, outer pieces - no seeds, small dice grated carrot as garnish (optional) extra olive oil as drizzle (optional) 2 thyme leaves for garnish (optional)
