This Mint Chocolate Chip Ice Cream Pie is my favorite ice cream pie, hands down. The ingredients that set it apart from your basic ice cream pie is the Oreo cookie crust with caramel and chocolate syrup drizzled over the top of the pie. Now you could use a premade cookie crust but because the crust is one of my favorite parts I am going to recommend to you to make your own. The homemade Oreo crust is going to put it one step above, maybe even two, three, or four.
