We love eggs for breakfast. They give us so much energy + this meal keeps us full for quite some time. The combination of cherry tomatoes, parmesan cheese and chives is simple and delicious. Lovely for a quick, wonderful breakfast or brunch. I like my eggs still a bit runny in the middle, but you can cook a bit longer for a thicker structure. Great with a dollop of sour cream or creme fraiche. You can also use ham, mushrooms, smoked salmon or any other filling.
