this is one of my favorite dishes from my country, i've tried to cook it by my self and this is good enough to awaken the appetite with it's juicy and aromatic sensation.. grilled chicken with herb and spices, kinda good for the diet and stomach health.
250gr minced chicken
1 teaspoon ground pepper (coarsely grounded)
salt to taste
sugar to taste
1 egg
a quarter of a whole young coconut (grater it)
5 red chilis
3 kaffir lime leaves (finely sliced)
15 lemongrass (used as the stick for the satai)
1 table spoon tapioca flour/starch
1 table spoon coconut oil to spread
6 cloves of onion
3 cloves of garlic
1 cm of average ginger
1 cm galangal(laos/lengkuas/blue ginger)
1 cm lesser galangal (kencur)
1/2 teaspoon grilled shrimp paste/fish paste
1/2 teaspoon whole ground pepper
1/2 teaspoon coriander
1/2 teaspoon cummin
