About Recipe

this is one of my favorite dishes from my country, i've tried to cook it by my self and this is good enough to awaken the appetite with it's juicy and aromatic sensation.. grilled chicken with herb and spices, kinda good for the diet and stomach health.

Ingredients

250gr minced chicken

1 teaspoon ground pepper (coarsely grounded)

salt to taste

sugar to taste

1 egg

a quarter of a whole young coconut (grater it)

5 red chilis

3 kaffir lime leaves (finely sliced)

15 lemongrass (used as the stick for the satai)

1 table spoon tapioca flour/starch

1 table spoon coconut oil to spread

6 cloves of onion

3 cloves of garlic

1 cm of average ginger

1 cm galangal(laos/lengkuas/blue ginger)

1 cm lesser galangal (kencur)

1/2 teaspoon grilled shrimp paste/fish paste

1/2 teaspoon whole ground pepper

1/2 teaspoon coriander

1/2 teaspoon cummin

Cooking Procedure

n ***for the mixture :nn -first, finely mashed and mix the onion, garlic, gingger, galangal, leser galangal, shrimp paste, ground pepper, coriander, and cummin togethernn  nn ***satai/sate :nn -add the mixture with the chicken, salt, sugar, pepper, and egg to make the doughnn -pour the coconut, kaffir leaves, and sliced chili into it and mix it wellnn -get ready the lemongrass sticksnn -add the starch/tapioca flour in to the mixture to make it more sticky/dense on purposenn -take 1 table spoon of the dough and put it on the lemongrass stick like the shape of drum stick, do it all the way to the 15th lemongrassnn -get ready the grillernn -grill the satai(stick drum), and spread some coconut oil on it. Turn it over continuesly until you get the golden-brown texture of colornn -cut off  the unecessarry part of the lemon grass to shorten the sticksnn  nn .nn *you can also grill the coconut first with a low fire to bring out the sweet aromann *serve it better with steamed rice and Sambal Matah from bali (see the recipes)n
