Ingredients

Olive or Vegetable Oil

400 gms of Lamb Pieces

1 Red Chilli, deseeded and sliced

2 tbsps of hoisin Sauce

1 teaspoon of Soy Sauce

2 Tablespoons of Rice Vinegar

Mint Leaves, Chopped

1/4 Cucumber cut into thin strips

1 Packet Noodles

10 - 12 French Beans

2 medium Sized Carots

1 Bunch Spring Onions

Handful Bean Sprouts (Optional)

1 tsp Ajinomoto Powder

2 to 3 tsp Soya Sauce

3 tsp Vinegar

Salt to Taste

8 tbsps Oil

Cooking Procedure

n Lam b in Hoisin Saucenn n Mix the hoisin sauce, soy sauce and rice vinegar together. Fry the lamb strips in the olive oil, add the chilli and fry for 30 seconds, add the hoisin sauce mixture and stir fry, turning the meat in the sauce.n n n Top with the mint leaves and serve with cucumber strips and noodles.n nnn Hakka Noodlesnn n Wash the vegetables. String the French Beans and make very fine strips.n n Peel the Carrots and cut them into fine strips. Chop the onions and take 3 stems of Spring Onions and finely chop them.n n Boil the noodles with sufficient water, some salt & 1 tbsp of Oil till the noodles are soft. Drain out the water.n n Pour some water (2-3 glasses) of room temperature on them, so that they do not stick together.n n Heat Oil in a sufficiently big kadai, add the chopped Onions and fry on a medium flame till they are transparent.n n Add the Vegetables, Bean Sprouts, Ajinomoto and salt to taste.n n Cook on a medium flame till the vegetables are tender but also crunchy.n n Add the noodles, soya sauce, vinegar and finely chopped Greens.n n Mix well, simmer for 5-10 minutes and serve hot.nnn  n
