Have you ever tried the Vietnamese Spring Rolls, also known as "Goi cuon"? I'm not talking about the baked or fried spring rolls you can purchase in the frozen food section! The traditional Vietnamese rolls are made with a rice "paper", called "banh trang". The wraps are paper thin, delicate, and clear. These are so unique- the presentation alone is stunning since the rice "paper" is completely see- through! Not only are these cool to look at on your plate, but they are totally satisfying, healthy, gluten-free, and insanely delicious! This is also a great meal you could make up ahead of time, (like on the weekends), since you serve these cold, or at room temp.! (As they are also known as "salad rolls".) They are traditionally served as an appetizer, but I will actually make these for my family's dinner since they are so incredibly healthy and filling! As with any traditional dish, you can always experiment and try different ingredients to make it a bit different, but the traditional components are: pork, prawns (or shrimp), rice "sticks" (rice vermicelli), cilantro (and/or basil and mint), and vegetables. I make these delicious rolls with just the pork for my family, (since only 1 of our kids enjoys seafood!), and they ALL love these! I buy the really thin sliced pork sirloin, (which cooks really quick), and I add some of the dipping sauce to the pork while it's cooking to really boost that incredible sweet and spicy Asian flavor! The pineapple is not a typical sweetener for Asian sauces, but really adds a different dimension to the depth of flavors going on with the sauce. Then you add in the sesame oil, Thai Chili sauce, soy, teriyaki, etc.- it's like a party in your mouth when you combine the whole thing together- dipping your finished roll in that sweet, spicy, salty, sauce..... just "out of this world" good!
