Recently, I had a discussion with a friend about the practicality and applications of infusing oils. He felt that infusions rarely were worth the effort it takes to make them. I have to say that I strongly disagree. Infusing fats and liquids is a wonderful way to add an extra dimension to a dish or beverage. Infusions can be used as a component in a more complex dish or simply enjoyed on it’s own like the chili oil.
